Rakije i likeri specifična su pića čiji postanak volimo pripisati narodima balkanskih prostora. Neizostavan su dio svakog kućanstva, bilo iz razonodnih, zdravstvenih ili nekih drugih razloga. Sigurno ste se katkada zapitali što je to rakija i što je čini različitom od likera?
Rakija je žestoko alkoholno piće, to je čisti destilat od nekoga fermentiranog voća što znači da se fermentirano voće stavlja u destilator (peć za rakiju) i pri procesu destilacije izdvaja se alkohol (rakija) najčešće jačine od 40% – 60% alk.
Rakija je čista (bez ikakvih dodataka) bezbojna.Travarice su rakije kojima se dodaju određeni dodaci. Prepečena rakija ili prepečenica je rakija koja se nakon prvog destiliranja (pečenja) vraća u peć i ponavlja se proces destilacije što rezultira većom kvalitetom proizvoda.

Likeri se rade od rakija ili od etilnog alkohola miješajući ih sa šećerom,voćem ili nekim aromatiziranim sastojcima. Liker je naziv za aromatizirana alkoholna pića s relativno visokim postotkom šećera (minimalno 100 grama na i postotkom alkohola od 24% do 60 %.
Razlikujemo:
Voćni likeri se proizvode metodom infuzije, u kojoj se voće miješa sa rakijom ili etanolom i šećerom, koji na taj način preuzima miris, okus i boju dodanog voća.
Biljni likeri se proizvode destilacijom ili cijeđenjem pa su zbog tog bezbojni, zbog toga im se dodaje lišće ili trave da dobiju specifičnu aromu. Destilirati se može praktički sve od sjemenki, lišća pa i korijenja, a isto tako to se koristi i kao začin koji daje aromu. Nakon što se alkoholna baza aromatizira, dodaje joj se šećerni sirup i bojilo na biljnoj bazi, a zatim se filtrira i flašira te nastane čudesni Suza liker!
